Healthy Sloppy Joes

Makes 4 servings, about 80 cents per serving including buns 

I like Sloppy Joes but don't like canned sauces that are overly-sweet, even when they're free with a coupon.  This is a healthy recipe everyone in our family likes.

 

1 lb. lean ground beef

1 14.5 oz. can diced tomatoes, undrained

2 Tbsp. tomato paste

1 carrot, finely diced

1/2 cup frozen corn (optional)

1/2 tsp. salt

2 tsp. sugar

1 Tbsp. Worcestershire sauce

2 tsp. red wine vinegar

 

Brown and drain ground beef.  Add the remaining ingredients, bring to a boil, lower the heat and simmer covered 30 minutes until thickened.  Serve over toasted sandwich buns, pasta or rice.
